Did You Say Latkes!?!

Shalom Y'all,
              I pray all is well with you and yours. Here at the Long Household we are preparing for Hanukkah and Kwanzaa,both fell on the same week this years!!! How exciting is that..Masai thinks it's the best thing ever lol. For both of these beautiful celebrations family and food are definitely at the center of them. Since we loove to cook this will be a piece of cake for us. However being that we try to live a complete holistic lifestyle I've decided to take some of our traditional family recipe and throw a healthier spin on it. So the Star for our Hanukkah Feast will be Latkes and Chucky Apple Sauce,so let's get started!

Latkes(4-6 servings)
4 medium russet potatoes
1 sm yellow onion
1/4 oat flour
1t baking powder
1T fresh basil
1T apple cider vinegar
1/2t himalayan salt
1/2t cracked black pepper
1/2cup distilled water
4T chia seeds
5T olive oil

Chunky Apple Sauce(3-4 servings)
3 medium gala apples
1t organic sugar
1t cinnamon
1t ground ginger
1/4 ground clove

Use a shredder to shredd potatoes(like you would for hash browns). Wash several times until water is clear. Set aside. Get a jar with a lid,add your 1/2 cup of water. Slowly add the 4T chia seeds. Secure with lid and give it a few shakes set aside. Chop up your onion and basil add to well drained potatoes. Add the flour,baking powder  and all seasoning. Take about 3T of your chia seed gel and add into the mixture. Carefully sprinkle the apple cider vinegar on top. Combine well,form in to 4-6 potato cakes. Place in inbox for 10-15 minutes.

Meanwhile wash and cut the skin off your gala apples. Place in a pot of boiling water. Cook until tender. Strain water off. Smash with a potatoe smasher. Add the sugar,cinnamon,ginger,and clove. Mix well. Place in icebox to chill.

Remove your Latkes from the icebox add your olive oil to a cast iron skillet. Allow to get hot(not boiling). Gently add 3 latkes at a time. Cook 3-4 minutes until nice and brown on either side. Once all latkes have been fried(or baked at 350 for 15 minutes per side). Remove chunky apple serve and enjoy!

Aloe Vera Spiced Drink

Shalom Yall,
    I pray all is well with you and yours? With winter coming there's sure to be yuckies floating around. So I've got a recipe that can be enjoyed by the sick and the healthy alike. The star in this yummy spicy creamy dreamy drink is Aloe Vera! Yes sir you heard me right. Aloe Vera is like Don of medicinal plants the benefits around out of the world! From burns,cuts,to a fighter of gingivitis, the list truly goes on and on. So let's get started.

Makes 2-4 serving

2 thick Aloe Vera leaves
6 chai tea bags(make tea according to package
1T powered ginger
1t cinnamon
1/2 clove
3-4T honey/agave
1t turmeric
3T non-dairy coco mix
4-6 cups any flavor nut milk

In a high powered blender add chai tea and all other ingredients except for the Aloe Vera. Blend for 2-3 minutes,let rest. Wash Aloe Vera leaves,slice down the middle, scrape out gel into a small bowl. Transfer milk mixture to a large pan. Slowly add Aloe Vera gel,and whisk to incorporate. Let it simmer for 4 minutes or so. Pour in mugs,top with a dollop of whipped cream,sprinkle with nutmeg(this also is divine with a shot or two of rum)and Enjoy!

Kwanzaa and Hanukkah

Shalom Y'all,
                I pray all is well with you and yours!!! There's so much happening this month both my nephews birthdays,and of course Kwanzaa and Hanukkah. Although my family doesn't celebrate holiday's we do enjoy family and friends on this Holy day and day of Unity!!!

So this week during our Learning Time my Sun and I have been talking and reading about these special day's. So it got me to thinking of ways to incorporate the history, reason for the celebration of these day's to life for him. For the past two years after Kwanzaa my Sun would pretend he was lighting the candles of a Kinara weeks after...lol.

So I'm like here's the perfect thing to do make our very own Kinara and Unity Cup. When we set down to discuss today's activities,he was so excited to hear of our plans. We had so much fun,and with the leftover clay he made a place to put his Chakra Stones.
